Serves 6-8 People
1/4 cup chopped cilantro
6 cloves of minced garlic
1/2 tomato chopped with seeds removed
1/2 onion chopped
1 jalapeno finely chopped
1 chipotle pepper finely chopped (Preferably in Adobo Sauce)
1 squeezed lime
Salt and pepper to taste

Sesame Kale Recipe
2-4 side servings
10 cups of roughly chopped kale or 2 bunches
4 cloves of garlic
1 small shallot
3 tbsp neutral oil (canola or vegetable blend)
1 tbsp of toasted sesame oil
1 tbsp apple cider vinegar
1 tbsp soy sauce/tamari
1 tbsp of sesame seeds
1 tsp of cayenne pepper
1 tsp of black pepper
Put 3 tbsp of neutral oil, 1 tbsp of vinegar, and 1 tbsp of soy sauce in a large pan on low heat.
Finely chop 4 cloves of garlic and 1 small shallot and add to the pan.
Add 1 tbsp of sesame seeds
Saute ingredients on low heat for 5 minutes. Do not let the garlic burn.
Then, roughly chop 10 cups of kale, remove the stems, and add to the pan.
Also, speed peel a carrot into ribbons and add to the pan.
Add 1 tbsp of toasted sesame oil, 1 tsp of cayenne pepper, and 1 tsp of black pepper.
Saute until kale starts to wilt. It should brighten up in color, if it turns brown you have overcooked it.
